Brownie Cups (secret ingredient)

These brownies are not your average sweet treat-- they have a secret ingredient, black beans! I know what your thinking, what!? Black beans no way can that taste good... well I was hesitant myself and have wanted to test it out for awhile, so I finally had some leftover black beans and decided it was time. Tell you the truth, I could event tell! They are fluffy, gooey, and taste like a decadent fudgy brownie. These brownies still have some sugar content in it, but at least they are packed with protein and fiber :) 
Black Bean Brownie Cups: (6 servings)

Ingredients:
1 cup  black beans
2 flax egg (1 Tbsp. flaxseed meal, 2.5 Tbsp. water each)*
1 Tbsp vegetable or coconut oil 
1 Tbsp Unsweetened applesauce
1/3 cup cocoa powder
pinch of salt
1 tsp vanilla extract
1/3 cup granulated sugar
1 tsp baking powder
1 tsp instant coffee granules
1/2 cup semi-sweet chocolate chips (non-dairy for vegan)
*Could also add, nuts, or sprinkles, etc.

Directions: 
Preheat oven to 350 degrees. Lightly grease 6 muffin tins. Prepare flax eggs in a small bowl and let stand for 5 minutes.Combine all ingredients listed except for chocolate chips in a blender or better, food processor (I still don't have one...) and blend until creamy smooth, takes a few minutes. Finally stir in chocolate chips into batter. Next simply, scoop batter evenly into 6 muffin tins and smooth the tops with a spoon, sprinkling extra chocolate chips on top to garnish. Bake for 25-30 minutes or until tops are dry and starting to pull away from the sides, or insert comes out clean. Let cool for 20 minutes before removing from pan.
* I only had whole flax seeds on hand, but 1 heaping tablespoon of flax seed blended is about 2 tablespoons  of ground flaxseed.

Make your flax eggs and let stand for 5 minutes.
















(these are soaked, not canned black beans, but you can use either)
Scoop black beans and place in the blender, along with all
the other ingredients - minus the chocolate chips. 
Blend until smooth, you will need to scrape down the sides.
Should look like regular creamy brownie batter.
Add-in the chocolate chips or w/e else you had in mind.
Scrape the batter into muffin tin.
Should make 6  individual brownie cups.
Top with chocolate chips on top if desired.
Bake for 25-30 minutes, until insert comes out clean.
And there you have it, Black Bean Brownie Cups.
