Potato Tuna Patties

These are something my husband really enjoys, as him mom always use to make them-- this is a similar version to hers.  These patties are easy, flavorful, filling, and inexpensive. Also a perfect pairing with some leafy greens, and a spoonful of salsa, or a dollop of sour cream.


Potato Tuna Patties: (makes 4)Adapted from My Kitchen Snippets

Ingredients:
1 can of tuna (in water)
1 small potato, diced
1 handful of cilantro, chopped
1 onion slice, finely chopped
2 green onions (fresh chives), chopped
1 small egg
2 tablespoons of bread crumbs
1 teaspoon of mustard
Salt and pepper to taste
1-2 teaspoons olive oil




Directions:
Boil diced potato in a small sauce pan, cover, and allow to cook for about 15 minutes or until soft. Drain the water and place boiled diced potato pieces in a mixing bowl. Next, mash potato, removing all chunks. Now drain the water from the canned tuna and combine with mashed potato. Finally toss in the remaining ingredients.  Mix everything together until well combined. Mold mixture into 4 patties using your hands. Heat a skillet over medium heat with olive oil. Cook the patties on each side for a few minutes until golden brown. Serve with salsa, sour cream, or tartar sauce.
