Spiced Sweet Potato Black Bean Tacos

The tacos were down right delicious!!! I have to say though, that I LOVE sweet potatoes-- possibly my favorite food and they are surprisingly very versatile. I have seen a number of recipes featuring a combination of black beans and sweet potatoes together, with these blue corn tortillas, I couldn't resist making tacos. And the mix is indeed perfect! These are super easy, healthy, and really tasty. You can simply use regular corn tortillas or even flour. I also used both soft and hard taco shells-- its rather simple to make your own in the oven. You can top these with whatever you would like also, I used salsa, jalapenos, cilantro, and spinach. But guacamole, sour cream (or Greek yogurt), and cheese are perfect options also.

Spiced Sweet Potato Black Bean Tacos: (serves 2 or 4 tacos)

1 tsp olive oil
1 medium sweet potato, scrubbed and diced
1/2 cup black beans
1/2 small onion, diced
1 garlic clove, minced
1/2 lime
1/2 tsp paprika
1/2 chili powder
4 tortillas

spinach or lettuce, chopped
sour cream (or Greek yogurt)

Heat olive oil over medium heat in a skillet. Optional: for softer sweet potatoes (or quicker cooking time) nook in the microwave for 1 minute. Add onions to the skillet and let cook for a couple minutes, until they begin to soften. Next, add in sweet potatoes and continue to cook for 3-5 minutes. Reduce heat to medium -low and add beans, garlic, spices, and squeeze lime over the top of the mixture. While stirring occasionally, let cook for another 10 minutes, or until sweet potatoes have softened. To serve, add 1/4 of the batch to each tortilla and add additional toppings.

Hard Shell Tacos: 
Preheat oven to 375 °F. If tortillas are not fresh, place them in a damp towel in the microwave for 10 seconds, then carefully drape each tortilla over one or two bars of the oven rack, depending on how wide you want them. Bake until crispy, 7 to 10 minutes.

    Prepare your tortillas-- hard shell (directions above) 
or soft (warm each side over a skillet before serving).
Slightly cooked onions + Sweet potatoes.
Add beans, garlic, spices, and lime juice. Cook and serve.

From beginning to end, these tacos only took me about 15 minutes to make. This is definitely a new go-to quick recipe to satisfy what is a usual unhealthy-indulgence.
