Chocolate Chip Chia Pumpkin Cookie Bites

These little pillowy cookie bites are so scrumptious, perfectly sweet and soft-- a great little snack or treat that's surprisingly healthy! These cookies do have some sugar in them, however are packed with a super seed with incredible nutrients and pumpkin! These are so easy and can be made round (as pictured) or simply flatten out before baking. This is a small batch, but you can easily double it to make more.

Chocolate Chip Chia Pumpkin Cookie Bites: (makes 8)
slightly adapted from Pure to Raw
1/4 cup + 2 Tablespoons whole wheat flour
2 Tablespoon chia seeds
2 Tablespoons brown sugar
2 Tablespoons semi-sweet mini chocolate chips
1/4 teaspoon baking powder
1/8 teaspoon baking soda
1 teaspoon pumpkin pie spice
1/2 teaspoon cinnamon
1/2 teaspoon of ground ginger, clove, and nutmeg

1 Tablespoon vegetable oil
1/2 teaspoon vanilla
1/4 cup + 1 Tablespoon canned pumpkin

Preheat oven to 350 degrees and grease a cookie sheet. Combine all dry ingredients into a medium bowl, mixing well. Next, combine wet ingredients, vanilla, oil, and pumpkin, into another small bowl. Add the wet to dry and mix until just combined. Scoop batter with a ice cream scoop for a larger cookie or like I did with a tablespoon-- keep rounded or flatten depending on what your desired cookie shape is. Bake for 15-20 minutes. Remove from pan and enjoy! Eat by itself, or accompined by ice cream or coffee, or crumple on top of your morning oats, like I did here.

Combine dry ingredients.
Add wet ingredients to dry and mix until combined.
Scoop onto greased cookie sheet & place in preheated oven @ 350 degrees.
Remove from oven after 15-20 minutes, should be slightly golden.
Melted chocolatey, soft, pillowy cookie bites ready for your enjoyment!
