Citrus Baked Sweet Potatoes

I absolutely LOVE yams! I could eat them everyday with no problem (the husband can vouch for this...) and the cool thing is that they are so versatile-- baked into chips/fries, cubed & roasted, baked, mashed, used in casseroles, or for baking. 
And not only that, but they are incredibly healthy for you as they are low in sodium, and very low in saturated fat, as well as cholesterol. They are also a good source of Dietary Fiber, Vitamin B6 and Potassium, and a very good source of Vitamin A, Vitamin C and Manganese. [source] 

So here is a simple, yet one of my favorite ways to eat yams, served as a side to your meal, as well as a much healthier alternative to those candied yams served at Thanksgiving. 

Citrus Baked Sweet Potatoes: (serves 2)
2 small sweet potatoes or yams
1 orange
2 tsp oats
dash of cinnamon
Additional Toppings:
chopped pecans or walnuts
ground nutmeg
brown sugar

Start by washing yams, pat dry, and poke several holes using a fork. Wrap in tin foil and bake in 400 degree oven until tender, about an hour. Unwrap yams and split open with a knife. Top with 1 tsp oats on each, cinnamon, and other additional toppings. Slice orange in half, remove seeds, and squeeze each half per yam or to your preference.
