Using the Basic Flat bread recipe from yesterday's post, I created a Mediterranean flat bread or I like to call it a mini-pizza! You could simply add any flavors you like and turn it into any flavor pizza. I didn't have any tomatoes, but would have definitely added them on if I had. Another suggestion is some feta cheese or any for that matter-- I stuck with plain and simple, using hummus as the sauce base. This is a quick & easy snack/meal, as well as so delicious!
Mediterranean Pizza: (serves 1)
1 flat bread w/ cumin spice
2 tbs hummus
1/4 green bell pepper
1 onion slice
1/2 tomato, sliced
sprinkle feta cheese or any(optional)
Spread hummus on top of flat bread. Add pepper, olives, onion, tomato, and cheese (if using) on top. Place inside a toaster oven for a few minutes until slightly crisp. Add alfalfa sprouts, slice into 4 triangles and enjoy!
