These Roasted Chickpeas are a great and healthy alternative to salted mixed nuts, crackers, chips, pretzels, salad topping and other munchies. They are great also as you can spice/season them pretty much with anything, make them sweet or salty, or both. Pictured here is a spicy Mexican spin using chili powder and lime. Once you pop one little chickpea in your mouth, you just can't stop!
1 can + (make as much as you would like!)
drizzle of oil
Drain and rinse chickpeas. Preheat oven to 400F. Mix everything in a bowl, making sure everything is evenly coated. Place chickpeas on a baking sheet in a single layer. Bake for 20-25 minutes, or until browned and crunchy. Store in an air-tight container.
