Coconut Chia Seed Brown Rice Pudding

Here is a decadent dessert made healthy! Instead of using white rice, by making a switch to a whole grain, brown rice, you instantly provide your body with some soluble fiber, good source of manganese and good fatty acids. I also went one step further by adding some chia seeds to help boost the nutrition even more, as well as give it that creamy texture without overdoing it with too much milk. This rice pudding may not be your traditional dessert, but it was incredibly, moist, sweet but not over the top, and just mouth watering, especially with the perfect combination of a fresh strawberry and coconut. You can't go wrong with this sweet, yet healthier indulgence.
Coconut Chia Seed Brown Rice Pudding: (6 servings --1/2cup ea)
1 cup brown rice, uncooked
1 cup water
3 cups coconut milk
1/2 cup unsweetened shredded coconut
1/4-1/2 cup sweetener (agave, honey, brown sugar)*
1/4 chia seeds
2 tsp cinnamon
1 tsp vanilla extract

Cook brown rice according to package, with 1 cup of water & 1 cup milk.  In the same pot, pour remaining 2 cups milk with rice and let cook over low heat. Add in remaining ingredients as well and combine. Let cook for another 15 minutes, until the milk has been absorbed, stirring often. Serve warm or cold and garnish with a fresh sliced strawberry. 
*The sugar amount you can adjust to your taste buds, I didn't want mine to be really sweet, so I opted for the lower sugar content and enjoyed it very much. Although most recipes call for more, taste and then add in more if you think its necessary.
