Samoa Macaroons


Using the leftover pulp from making coconut milk from yesterday's post, I made these soft melt-in-your-mouth delicious sweet treat with only a few ingredients. These were so yummy, the husband and I ate a couple even before I took photos... I drizzled mine with some melted chocolate to get that girl scout cookie taste of a Samoa cookie, but you can of course just keep them plain and they are as equally delightful.







Samoa Macaroons: (8 cookies)
3 tbs agave
1 cup coconut pulp (or shredded coconut)
2 tbs oat flour (or any)
dash of salt
1 tsp vanilla
melted chocolate

Directions: 
Preheat oven to 325F degrees. Using leftover coconut pulp, combine all the ingredients together except melted chocolate. Mix until thoroughly combined and in a one giant mass. Using a tablespoon scoop the dough, making small rounds and place on baking sheet. Bake cookies for about 15 minutes or until golden brown. Melt chocolate or use chocolate syrup even and drizzle over cookies. Serve warm or cool, bet you cant eat just one ;)
