Happy March everyone & with spring quickly approaching, I honestly don't know another way to ring it in than with this breakfast medley. It will have your heart happy, your sweet tooth satisfied, and your belly full! The hot oats mixed with cold creamy yogurt just has you saying MMM, melts in your mouth, wanting more kind of combination. This parfait is a perfect breakfast treat that simultaneously packs in the protein, good fats, nutrients-- great pre or post workout meal, snack, or a dessert quencher too. I have serious cravings for this gem & you can mix-up any ingredients & layer as your heart desires. It's also
too easy not to try, you just prepare the ingredients & layer!
Yogurt Oatmeal Parfait: (serves 1 or 2 snack-size)
*Note: Prepare the following however you like-- this is just my version
3 strawberries, diced
1/2 banana, chopped
1 T sun/seed butter
1 T shredded unsweetened coconut
1/3 cup plain Greek yogurt
1 tsp honey (optional)
1/4 cup oats
1 cup water
2 tsp ground flax seed/ chia seeds
1/2 tsp cinnamon
1/2 tsp cinnamon
cocoa nibs/ chocolate chips
berries/ citrus/ fruit
- Prepare oatmeal: cook oats in small sauce pan with 1 cup boiling water, add ground flax seed or chia seeds, let simmer for about 5 minutes. Add 1/2 chopped banana and mix. Let simmer until water has been absorbed & you should have a voluminousness amount of hot oats.
- Chop fruit as oatmeal cooks, you can dice or blend for a puree topping if you prefer
- Mix sweetener with yogurt if you need be.
- With all ingredients read: begin layering! 1/4 cup yogurt, 1/4 cup oats, seed/nut butter/ coconut, fruit, & continue until your bowl/glass is full or you have run out of fruit. The best part of this recipe is you get to adjust it to your preference, play around with ratios, enjoy!
