Monica + Mark's Summer Visit

We had the sweet joy of Monica & Mark coming to visit us for the second time a couple weeks back. It was one of the most enjoyable vacations although I didn't capture as many photos as I would have liked. Of course it was extremely hot, however, we managed to stay cool as we explored La Paz and neighboring sights such as the small town,Todos Santos, and a new favorite beach, Los Cerritos. We definitely ate our fair share of street tacos & homemade ice cream during their trip, they couldn't have been more easier to please. We enjoyed nice long walks, which actually looked forward to most as Monica and I had some incredible & uplifting conversations, taking-in as much wisdom of hers I could. After each conversation, I always felt so uplifted with a much more God-inspired perspective. We were so blessed to spend so much quality time with them all the while being a tour guide and on vacation simultaneously, it really can't get much better than that! We sincerely consider them family and miss you guys so much. This is only a mere peek into our time together, as by the end of each day we wee exhausted in a great way.

 Sam and Mark did some off-roading adventures of course, while us ladies relaxed by the poolside, it's a hard life... 




We have different gifts, according to the grace given to each of us. If your gift is prophesying, then prophesy in accordance with your faith; if it is serving, then serve; if it is teaching, then teach; if it is to encourage, then give encouragement; if it is giving, then give generously; if it is to lead, do it diligently; if it is to show mercy, do it cheerfully.

Monica and her family have truly offered their many gifts to us of all means; wisdom, time, encouragement, love,etc. and we could not be more blessed by them. It was truly such a pleasure & blessing to share these memories together, as well as what an impacting & encouraging time to have family come visit. It was so hard to say goodbye, looking forward to the next time we see you and the family again. Blessings to you & so grateful for the impact you have made on our lives.

Coconut Strawberry (instant) Ice Cream




Well the heat here in La Paz has definitely kicked in, we are talking in the 100's. So despite seeking air conditioning for help, I have been finding ways to beat the hot summer with lots of smoothies, healthy soft-serve (herehere), and now this sweet gem! 

When I make coconut milk, often I'll freeze a ice cube tray or two full, to use for smoothies or to toss in my iced coffees, but thought it would make the perfect creamier base to a blended treat. This is a mix between a really thick shake & sorbet, but full of refreshing & nutritious ingredients that can be made in a flash. What also is great, is you can simply change the strawberries for any fruit you have on hand or perhaps enjoy more & turn into a sweet & healthy treat that will cool you down & leave you satisfied.



Ingredients:
1/2 cup coconut ice cubes
1/2 frozen banana
1 cup strawberries
1-2 Tbs coconut milk

Toppings:
fresh strawberries
shredded coconut
chocolate chips
chopped nuts

Directions:
Freeze coconut milk into ice cube trays. Let set (a few hours). Combine ingredients into a blender, crush until smooth. Serve in a bowl & add your favorite toppings.
