Coconut Strawberry (instant) Ice Cream




Well the heat here in La Paz has definitely kicked in, we are talking in the 100's. So despite seeking air conditioning for help, I have been finding ways to beat the hot summer with lots of smoothies, healthy soft-serve (herehere), and now this sweet gem! 

When I make coconut milk, often I'll freeze a ice cube tray or two full, to use for smoothies or to toss in my iced coffees, but thought it would make the perfect creamier base to a blended treat. This is a mix between a really thick shake & sorbet, but full of refreshing & nutritious ingredients that can be made in a flash. What also is great, is you can simply change the strawberries for any fruit you have on hand or perhaps enjoy more & turn into a sweet & healthy treat that will cool you down & leave you satisfied.



Ingredients:
1/2 cup coconut ice cubes
1/2 frozen banana
1 cup strawberries
1-2 Tbs coconut milk

Toppings:
fresh strawberries
shredded coconut
chocolate chips
chopped nuts

Directions:
Freeze coconut milk into ice cube trays. Let set (a few hours). Combine ingredients into a blender, crush until smooth. Serve in a bowl & add your favorite toppings.

  1. Yummy Coool! I want to try! I need to look up how you make coconut milk. We buy young coconuts and LOVE the flower delicious coconut water, but I don't think that's what you mean. Hugs and love! Can't wait for you to move home and have that wedding party!!

    1. Oh I meant, to post the link for that-- it's up now. But you can just use the meat of the coconut, coconut water, & regular water to create coconut milk, which is exactly what I used (it wasn't a young one though...) Also, we can;t wait either, thanks for your enthusiasm & love. Blessings to you & the family!
